  • Strong knowledge of cooking techniques, cuisines, ingredients and kitchen equipment.
  • Formal Culinary/ Food and Beverage Production certificate, diploma or equivalent training.
  • Valid Food Handler’s Medical Certificate.
  • Minimum of 5 years’ experience in a professional hospitality kitchen.
  • Clear understanding of HAACP and other food safety systems.
  • Proven experience in supervising a team in a busy environment.
  • Ability to work in a fast-paced environment.
  • Accurately and efficiently prepare all food items and maintain consistent quality and presentation.
  • Portion food products prior to preparation.
  • Receiving and inspecting of all food items to ensure quality and maintenance of food safety standards.
  • Conduct proper opening and closing of all stock while accurately maintaining inventory.
  • Control of all food items in the kitchen.
  • Work with the Head Chef on menu planning, specials and seasonal updates.
  • Assist in costing and portion controls to meet the kitchen’s profitability goals.
  • Any other duty assigned by Management.
